In a deep-frying pan add a the veg oil, over a medium heat add the salmon and seal each side until just golden, set aside.

Add the onion to the pan and cook for a few minutes, add in the garlic, ginger and turmeric for 1 minute, stirring constantly.

Add the zingy boost followed by the coconut milk, mix well and bring just to a simmer. Add the salmon fillet pieces back into the pan and cook for 4-5 minutes, add the mangetout and cook for a further 1-2 minutes until the salmon and mangetout are cooked.

Add the lime zest and juice and serve in a bowl with the rice!
